Amuse Bouche

Feb 8, 2014 | 0 comments |

We initially started this blog to document our story, travels and wine adventures, but many followers later, we’ve got a reputation to hold up!  *No slackers please* Over the course of the next several posts, we’ll tell a story of how we met, and the one August, at which part our two journeys became one.

Undefinable, we grow, make, learn and teach, taste, spit and swallow (giggle) wine — and apparently now we are writing about it!

Bottle Talks hopes to integrate wine – and if we’re lucky, beer and spirits,  travels, and perhaps once in a while dining  experiences and share them here.  It is a way for us to remember and reflect, and hopefully we can provide some light reading, entertainment and perhaps even something to learn!

Cheers and Prost,

Jenny and Johannes

Wine’s DND (Do Not Disturb) Phase

Wine’s DND (Do Not Disturb) Phase

After several years in bottle, wine can dip into a ‘dumb phase.’ This wine was probably fruit forward, round on the palate, full of minerality and expressive of all beautiful traits that define classic Riesling, but are now muted, and the wine seems uninteresting and dull. Sometimes, decanting can help bring the wine to life, but typically, this is a phase that can go on for months to a few years.
